Chef shares the secret to roasting potatoes that makes them ‘impossibly crispy’

One chef has a recipe that he says praises the “rich and decadent” flavor combined with the perfect texture of roasted potatoes. Chef Ronny Joseph Lvovski shared the recipe on his TikTok page and on his blog www.cookprimalgourmet.com.

He explained that the potatoes give the illusion “that a french fry and a mashed potato would have a love child.” Ronny explained that the potatoes are “impossibly crispy on the outside (but) soft and fluffy on the inside.” The key, he says, is to add two simple ingredients that can enhance the flavor and texture of the potatoes.




The chef explained, “I roast the potatoes in duck fat, which gives them a rich and decadent flavor, but you can substitute any neutral-flavored oil with a high smoke point, such as avocado oil, beef tallow, or ghee.

“For an extra burst of flavor, I sometimes combine some roasted garlic with chopped fresh rosemary and stir it into the potatoes just before they finish cooking,” reports the Express.

According to Ronny, baking soda is the solution for that crispy appearance.

“As for the baking soda, it’s not required, but adding a small amount to the water creates a more alkaline environment that helps the potatoes break down, resulting in crispier pieces when roasting,” he said. When you sprinkle baking soda on top, it interacts with the potato’s pectin, a type of starch, and draws it straight to the surface.

That’s the secret behind that irresistible crispy layer and that luscious golden brown color.
